KARAAGE (CHICKEN) [Level ★]

KARAAGE is very popular among children and adults of all ages.

Karaage Chicken is one of the most popular Japanese dishes not only within Japan but abroad as well. Chicken pieces are deep fried twice to make them crunchy on the outside and juicy inside.

If it is the marinated type, it will soak up the flavor and look better.
Guam’s fried chicken with bones is delicious. Japanese fried chicken is boneless. Even without bones, Japanese fried chicken is delicious.

Ingredients     (4 Servings)

  • 1.3 lb                      CHICKEN THIGH
  • 4 Tbsp                    Soy sauce
  • 4 Tbsp                    COOKING SAKE
  • 4 Tbsp                    MIRIN
  • 1/2 tsp                    S&B AJISHIO KOSHO (SEASONED PEPPER)
  • 1 tsp                       Ginger
  • 1 tsp                       Garlic
  • 5 Tbsp          KATAKURI KO (POTATO STARTCH)
  • Some            Fried  Oil

Instructions

① Trim excess fat from chicken thighs and cut into bite-sized pieces.
② Put MIRIN, sake, soy sauce, and sugar in a ziplock.Add grated garlic and ginger.Add the chicken to the marinade.
③ Remove the air and let it marinate in the refrigerator for about an hour.
④ Squeeze out the water and sprinkle with potato starch.Heat oil to 350F and deep fry.
⑤  Deep-fry for 2 minutes, then remove from heat.Remove the tenkasu.Fry again at high temperature until golden brown.

📌 The marinade will taste good even after it has cooled.
📌 Deep-frying twice makes the outside crispy and the inside juicy.
📌 Marinate according to the amounts to get a consistent taste, so please try it.
📌 You can substitute cornstarch for the potato starch, but potato starch is the   best for a crispy texture.

KATAKURIKO/Garlic and ginger tubes

Potato starch(KATAKURIKO), when used at high temperatures in soups and starchy sauce, thickens more than cornstarch and gives a clear and beautiful result.
